- 1/3 cup plus 1 tablespoon whole-wheat flour (2 ounces)
- 3 1/3 cups plus 1 tablespoon all-purpose flour (1 pound, 3 ounces), plus more for dusting
- 2 ¼ cups whole-wheat flour (12 ounces)
- 2 3/4 cups plus 2 tablespoons warm water (85-90 degrees f)
- 1 tablespoon salt
