Summer Roll Bowl

Vietnamese summer rolls become a cool, refreshing meal in a bowl, and almost everything can be done ahead of time. Rice vermicelli, lettuce, herbs, carrots, shrimp, and pork are drizzled with a peanut-hoisin sauce, with a little, or a lot of heat—you decide!

Ingredients

  • 1/2 pound cleaned raw shrimp
  • 1/2 pound ground pork
  • 1/2 cup chopped onions
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon avocado oil, or other neutral cooking oil
  • 4 cloves garlic, minced
  • 1/3 cup hoisin sauce
  • 2 tablespoons smooth peanut butter
  • 2/3 cup water
  • 1 1/2 teaspoons sambal chili paste, or to taste
  • 8 leaves romaine or leaf lettuce, thinly sliced
  • 4 sprigs mint, coarsely chopped
  • 4 sprigs cilantro, coarsely chopped
  • 1/2 cup matchstick carrots
  • 8 ounces asian-style vermicelli rice noodles
  • 1/3 cup crushed peanuts
  • 3 green onions chopped, for garnish (optional)
