One Skillet Chicken Paprikash with Mushrooms & Onions
Try this quick and easy one-skillet version of the Hungarian classic chicken paprikash. Serve the chicken cutlets, mushrooms and creamy sauce over egg noodles with a green salad on the side.
Ingredients
- 1 pound chicken cutlets
- ½ teaspoon salt, divided
- ¼ teaspoon ground pepper
- 2 tablespoons extra-virgin olive oil, divided
- 1 large onion, halved and sliced
- 8 ounces white mushrooms, sliced
- 4 teaspoons sweet paprika
- ¼ teaspoon crushed red pepper
- ½ cup low-sodium chicken broth
- ½ cup sour cream
- chopped parsley for garnish
