Garlic Cashew Chicken Casserole
Combine brown rice, cashews, chow-mein noodles and vegetables galore with chicken in this delicious casserole.
Ingredients

- 1 cup reduced-sodium chicken broth
- ¼ cup hoisin sauce
- 2 tablespoons grated fresh ginger
- 4 teaspoons cornstarch
- ½ teaspoon crushed red pepper
- ⅛ teaspoon ground black pepper
- 1 pound skinless, boneless chicken breast halves, cut into 1-inch strips
- 2 medium onions, cut into thin wedges
- 2 cups sliced bok choy
- 1 cup sliced celery (2 stalks)
- 1 cup sliced carrots (2 medium)
- ¾ cup chopped green sweet pepper (1 medium)
- 6 cloves garlic, minced
- 2 cups cooked brown rice
- 1 cup chow-mein noodles, coarsely broken
- ½ cup cashews
- ¼ cup thinly sliced green onions (2)
