Easy Chicken & Broccoli Soup
This easy chicken and broccoli soup is creamy and luscious, but still light. The broccoli florets absorb the creamy soup base, while the chicken stays tender. This is the perfect soup to make on a busy weeknight when you have leftover roast chicken or rotisserie chicken on hand. While the recipe calls for chicken breasts, if thighs are what you have on hand, feel free to use those.
Ingredients
- 3 tablespoons unsalted butter
- 1 ¼ cups thinly sliced leek, white and light green parts only
- 3 medium carrots, chopped
- 2 medium celery stalks, chopped
- 4 cloves garlic, finely chopped
- 3 tablespoons all-purpose flour
- ½ cup dry white wine
- 4 cups unsalted chicken broth
- 1 ½ cups whole milk
- ½ teaspoon ground pepper
- ¼ teaspoon salt
- 3 cups broccoli florets (about 8 ounces)
- 3 cups shredded cooked chicken breast
- 2 tablespoons lemon juice
