Cucumber Salsa
This fresh, tangy cucumber salsa is perfect for grilled fish or on its own as a simple side salad. Well balanced and easy to make, the flavor mellows and the cucumber softens as this sits, so it can easily be made a day or two ahead of time--or enjoy it right away, fresh and crisp.
Ingredients
- 2 cups diced english cucumber
- 1 cup diced honeydew melon
- ½ cup chopped fresh cilantro
- ¼ cup finely chopped white onion
- 1 small jalapeño pepper, stemmed, seeded and finely chopped
- 1 teaspoon grated lime zest
- 2 tablespoons fresh juice
- 2 teaspoons white-wine vinegar
- 1 teaspoon sugar
- ¼ teaspoon salt
