Chicken Parmesan Casserole
We took the best parts of chicken Parmesan—ooey-gooey cheese, crispy breadcrumbs and plenty of tomato sauce—and spun them into an easy family-friendly casserole.
Ingredients
- 8 ounces whole-wheat rotini
- 4 tablespoons extra-virgin olive oil, divided
- 1 cup chopped onion
- 3 (15-ounce) cans no-salt-added crushed tomatoes
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- ¾ teaspoon crushed red pepper
- ½ teaspoon dried basil
- ½ teaspoon salt
- 2 cups shredded cooked chicken
- 1 cup shredded mozzarella cheese
- ½ cup panko breadcrumbs
- ¼ cup grated parmesan cheese
- 2 tablespoons chopped parsley
