Chef John's Grilled Lamb with Mint Orange Sauce
These tender grilled lamb loin chops are marinated in a wonderful blend of Mediterranean spices. Serve with my delicious homemade mint sauce made with orange marmalade and fresh mint.
Ingredients
- 2 pounds lamb loin chops
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 teaspoon mixed herbs (such as italian, greek, or french blend)
- ½ teaspoon ground black pepper
- ½ teaspoon ground coriander
- ¼ teaspoon cinnamon
- 1 pinch cayenne pepper
- salt to taste
- ¼ cup orange marmalade
- 1 tablespoon chopped fresh mint
- ½ tablespoon rice wine vinegar
- 1 pinch red pepper flakes
