Banana Cookies
This soft banana cookie recipe is the perfect way to use up overripe bananas. Cinnamon and sugar crusted with a soft center.
Ingredients
- 3 3/4 cups flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon ground nutmeg
- 1 cup unsalted butter , room temperature
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1 cup ripe banana* , mashed
- 1 large egg , room temperature
- 2 teaspoons vanilla extract
